Better for You Sweet Potato Chili

What you'll need: 

12 ounces Lightlife Smart Ground Meatless Original Crumbles

2 (15 ounce) cans black beans, drained and rinsed

28 ounce can diced tomatoes

28 ounce water

1 1/2 cup chopped red onion

4 tablespoons DIY chili seasoning

1 tablespoon dark chocolate cocoa powder

2 medium sweet potatoes, microwaved to barely fork tender, peeled and cut

How to make it: 

Add first 7 ingredients to large saucepan. Heat on medium high until reaching a boil and then reduce heat to simmer.  Simmer for 1 hour, stirring occasionally.

Add precooked sweet potatoes, cut in 1/2 to 1 inch chunks.  Reduce heat to low and cook for additional 30 minutes, stirring occasionally.

Garnish with sour cream and cilantro and serve.
