Breakfast Casserole with Gimme Lean Sausage

What you'll need: 
Recipe:
2 tablespoons olive oil
1/2 onion thinly sliced
1 large minced garlic clove
2 chipotle chiles in adobo sauce finely chopped (add less if you prefer a milder flavor)
1 teaspoon ground cumin
1 pack Lightlife Gimme Lean Veggie Sausage (14oz)
1 can (28oz) crushed tomatoes
1 can (14oz) black beans, rinsed and drained
1/2 cup chopped fresh cilantro
1/4 teaspoon salt
1/2 teaspoon ground black pepper
2 large eggs
 
Extra items for garnishing-
Fresh salsa
Cilantro
Crumbled Mexican Cojita cheese
Tortillas
How to make it: 
Preheat your oven to 375 degrees F.
In a deep ovenproof 10 inch pan heat the olive oil over a medium heat.
Add the onion and cook until soft, about 3-4 minutes
Add the garlic, chipotle and cumin. Stir well.
Place the Gimme Lean Sausage Meat into the pan and break up with a wooden spoon.
Mix it through the onion and spices and cook for about 5-6 minutes and the sausage starts to brown.
Add the tomatoes, black beans and cilantro and mix together.
Bring the pan back to a simmer and then season with salt and black pepper.
Place the pan into the oven and bake for 30 minutes.
Once the casserole is ready, fry both of the eggs to your preferred doneness and place on top of the casserole.
Crumble some of the cheese over the casserole and finish by garnishing with more fresh cilantro.
Serve with salsa and tortillas.
