Chick'n Parmesan

What you'll need: 

2 packages (6 oz each) Lightlife® Smart Cutlets® Original
3 Tbsp. olive oil, divided
1/2 cup chopped yellow onion
1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
1 can (8 oz) tomato sauce - no salt added
1/4 cup Italian-style bread crumbs
2 Tbsp. grated Parmesan cheese
1 egg, beaten
1/2 cup shredded part-skim mozzarella cheese

How to make it: 

Heat 1 tablespoon of oil in medium saucepan over medium-high heat. Add onion; cook 4 minutes or until tender, stirring occasionally. Add undrained tomatoes and sauce; stir to combine. Bring to a boil; reduce heat and simmer 5 minutes, stirring occasionally.

Meanwhile, combine bread crumbs and Parmesan cheese in shallow dish. Place egg in another shallow dish.

Heat remaining 2 tablespoons of oil in large skillet over medium-high heat. Dip each Smart Cutlet® in egg, coating both sides. Coat with crumb mixture; place in skillet. Cook 5 minutes or until golden brown, turning once. Reduce heat to low; pour sauce mixture over Smart Cutlets®. Top each Smart Cutlet® evenly with mozzarella cheese; cover skillet and cook 5 minutes more or until cheese melts.
