Gimme Lean Breakfast Casserole

What you'll need: 

1 package (14 oz) Lightlife® Gimme Lean® Sausage
cooking spray
6 eggs, beaten
1 1/2 cups reduced fat (2%) milk
5 cups French bread cubes (3/4-inch cubes)
3/4 cup shredded cheddar cheese, divided
1/4 tsp. salt
1/8 tsp. ground black pepper
1 Tbsp. olive oil
1 package (8 oz) sliced fresh button mushrooms
1/2 cup chopped yellow onion

How to make it: 

Preheat oven to 375°F. Spray 8x8-inch glass baking dish with cooking spray; set aside. Combine eggs, milk, bread, 1/2 cup of cheese, salt and pepper in large bowl. Toss until bread is coated well; set aside.

Heat oil in large skillet over medium-high heat. Add mushrooms and onion; cook 5 minutes or until mushrooms are tender, stirring occasionally.

Meanwhile, cut Gimme Lean® into bite-sized pieces using serrated knife; add to skillet. Cook 3 minutes more or until Gimme Lean® has browned lightly. Remove from heat; cool slightly. Add Gimme Lean® mixture to bread mixture; stir to combine. Place mixture in baking dish; top with remaining 1/4 cup of cheese.

Bake 40 minutes or until knife inserted in center comes out clean. Remove from oven; let stand 5 minutes.
