Italian Sausage Stuffing
2 tablespoons olive oil
1 pack (12oz) Lightlife Italian Smart Sausages sliced into chunks
1 medium onion sliced thinly
2 tablespoons butter
8 oz sliced brown mushrooms
1 apple diced
1 pear diced
3 tablespoons brown sugar
1/4 teaspoon cinnamon
5 cups large bread cubes
1/2 cup vegetable stock
2 tablespoons chopped fresh thyme
salt and black pepper
Preheat the oven to 350 degrees F.
In a large pan heat the olive oil and cook the sausage for 3-4 minutes. Transfer to a plate.
Add the onion and butter to the pan and cook until the onion softens, about 5 minutes.
Add the mushrooms and stir.
Add the apple, pear, brown sugar and cinnamon and cook for about 3-4 minutes and everything is well coated.
Place the bread cubes in a large bowl and add the contents from the pan, the stock, thyme and salt and pepper.
Toss the whole amount gently with your hands making sure the bread is coated well.
Transfer the stuffing to an oven safe dish and bake covered loosely with foil for 30 minutes.
Take the foil off and bake for another 10-15 minutes and the stuffing is golden brown.
