Lentils with Garlic and Smart Ground
1 package (12 oz) Lightlife® Smart Ground® Original
2 Tbsp. vegetable oil
1 Tbsp. finely chopped garlic
1 tsp. ground cumin
1 tsp. dried thyme leaves
1 container (32 oz) vegetable broth
1 cup diced carrots
1 cup diced celery
1 cup dried lentils (green)
1 large bay leaf
1/2 tsp. salt
1/4 tsp. freshly cracked pepper
hearty whole grain bread (optional)
In Dutch oven place oil; add Smart Ground® Original and garlic. Cook and stir over medium heat, breaking into crumbles, until browned (2-3 mins.).
Add cumin and thyme leaves. Continue cooking, stirring frequently, 30 seconds to 1 minute. Add remaining ingredients except bread.
Bring to a boil; reduce heat to medium, cover and continue cooking for 15-18 mins. or until lentils and vegetables are softened.
Serve with hearty pieces of whole-grain bread, if desired. Refrigerate leftovers.
