Linguini with Smart Strips and Artichokes
1 package (6 oz) Lightlife® Smart Strips® Chick'n
8 ounces linguini pasta
2 Tbsp. extra virgin olive oil
2 jars (6.5 oz each) marinated artichoke hearts, drained
1/3 cup sliced Greek-style green and black olives
1/4 cup extra virgin olive oil
3 Tbsp. freshly-squeezed lemon juice
1 tsp. freshly-grated lemon zest
1/4 tsp. salt
1/8 tsp. freshly cracked pepper
freshly shredded Parmesan cheese (if desired)
foccacia bread (if desired)
In Dutch oven bring 4 to 6 quarts of water to a boil. Add linguini pasta to the boiling water; stir gently. Return to a boil. For "al dente" pasta, boil uncovered, stirring occasionally, for 9 minutes. Remove from heat; drain well. Keep warm.
In 10-inch nonstick skillet place 2 tablespoons of olive oil. Add Smart Strips® Chick’n. Cook over medium heat, stirring occasionally, until lightly browned (2-3 mins.). Remove from pan.
In large mixing bowl place warm linguini; add cooked Smart Strips® Chick’n and all remaining ingredients. Mix well.
Sprinkle top with Parmesan cheese and serve with warm focaccia, if desired. Refrigerate leftovers.
