Mediterranean Chick'n Cutlets

What you'll need: 

1 package (6 oz) Lightlife® Smart Cutlets® Original
2 tsp. olive oil
1 tsp. freshly ground black pepper
2 sun-dried tomatoes packed in olive oil, sliced in thin strips
10 Kalamata olives, chopped
2 Tbsp. crumbled Feta cheese

How to make it: 

Preheat oven to 450°F.

Drizzle 1 teaspoon of the olive oil on to a 2x4 inch-area in the center of a 12-inch square piece of parchment paper. Place one Smart Cutlet® Chick’n fillet on top of the oiled section. Season with freshly ground black pepper. Turn Smart Cutlet® over and season the other side with black pepper. Place sliced sundried tomatoes in a line across the top of the Smart Cutlet®. Add chopped Kalamata olives. Drizzle one tablespoon of olive oil from the sundried tomato jar over top.

Fold the top and bottom sections of the parchment paper towards the center. Continue folding all the way down then fold the side pieces once or twice and tuck them under the package. You should end up with a slightly loose package with tight ends. Repeat with next Smart Cutlet®.

Place both packages on a baking sheet. Bake for 8 minutes. Remove from oven and let sit for 3 minutes longer while the food continues to steam. Carefully unfold the packages; they will be hot. Transfer to a plate. Pour all juices from cooking over the top. Sprinkle evenly with crumbled feta. This dish is delicious served with brown rice and a crispy salad, if desired.
