Mexican Spaghetti Sauce
1 package (12 oz) Lightlife® Smart Ground® Mexican
1 Tbsp. olive oil
3/4 cup chopped onion
1 jar (26 oz) marinara sauce
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes, undrained
1 cup frozen whole kernel corn
1/4 cup salsa
1 can (4 oz) diced green chilies
1 Tbsp. chili powder
1/4 tsp. ground black pepper
In a large skillet, heat olive oil over medium heat. Add onion, sauté until translucent.
In a large saucepan, combine Smart Ground® Mexican, spaghetti sauce, beans, tomatoes, corn, salsa, chilies, chili powder and pepper. Stir in sautéed onion. Bring to a boil. Reduce heat; simmer uncovered 20-30 mins.
Serve over spaghetti.
