Sausage, Peppers and Onion Hero with Mustard Sauce

What you'll need: 

Sauce: (yields about 1/4 cup)
3 tablespoons spicy brown mustard
1 tablespoon honey
1 teaspoon lemon juice
1 tablespoon finely chopped parsley
1/8 teaspoon black pepper, or to taste
1/8 teaspoon garlic powder, or to taste

12-ounce package of Lightlife® Smart Sausages - Italian
1-2 tablespoons olive oil
1/2 large onion, halved and sliced
1 large red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 garlic clove, sliced
1/2 teaspoon dried oregano
1 long baguette, toasted and cut into 4 pieces

How to make it: 

In a small bowl, whisk together mustard, honey, lemon juice, parsley, pepper and garlic powder. Set aside.

Cut each sausage link into three even pieces. Heat oil in a large skillet over medium heat. Add the sausage links and cook for about 5 minutes, turning frequently.

Add onions, peppers, garlic and oregano to pan and cook for 5 to 7 minutes until vegetables are tender and the sausages are cooked through.

Halve baguette rolls. Divide sausages and peppers evenly and place on rolls. Serve with mustard sauce drizzled on top.
