Savory Breakfast Frittata

What you'll need: 

3 ounces (3 tenders) Lightlife® Smart Tenders® Savory Chick'n®
2 Tbsp. extra virgin olive oil
1/2 cup (3 ounces) asparagus, cut into 1 1/2 inch strips
1/2 cup pepper (red, yellow, orange), cut into 1 1/2 inch strips
1/2 cup sliced yellow onion
3 eggs
3 egg whites
2 Tbsp. fat-free half-and-half
1/4 cup (2 ounces) cream cheese, softened, in small pieces
1/4 tsp. salt
1/8 tsp. freshly cracked pepper

How to make it: 

Heat olive oil in an ovenproof, 10-inch, nonstick skillet. Add Smart Tenders® Savory Chick'n®. Cook over medium heat until lightly browned (2-3 mins.); turn over, continue cooking until lightly browned (1-2 mins.). Remove from pan, shred and set aside.

In same pan, add asparagus, peppers and onion. Cook, stirring occasionally, until vegetables soften slightly (3 to 4 mins.).

Meanwhile, in a medium mixing bowl, place eggs, egg whites, half-and-half, cream cheese, salt and pepper. Using a wire whisk, stir the eggs until mixture is slightly fluffy (mixture is lumpy). Pour over vegetables in pan and add shredded Smart Tenders®.

Continue cooking, over medium heat, 2 minutes; lift edges slightly to allow eggs to flow under. Continue cooking 2 minutes. Repeat lifting edges to allow eggs to flow under. Cook additional 2 minutes or until bottom is light brown.

To finish cooking top of eggs, place pan under low heat broiler. Broil 30 seconds to 1 minute or until frittata is puffy and light brown. Remove from oven and serve immediately. Refrigerate leftovers.
