Preheat oven to 350°F.
In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add carrots, celery and onion; cook about 5 minutes or until tender, stirring occasionally. Remove from skillet.
In the same skillet, heat remaining 1 tablespoon of oil. Add mushrooms; cook about 5 minutes or until browned. Add vegetables and Smart Ground® Original to skillet; stir in tomato paste, soy sauce and flour. Add broth, salt and pepper; bring to a boil, reduce heat and simmer 1 minute. Spoon Smart Ground® mixture into 6 one-cup ramekins or ovenproof dishes. Spread mashed potatoes on top to cover completely. Bake about 30 minutes or until filling is bubbly and potatoes begin to brown.

2 cups quartered cremini mushrooms
