Smart Patty Sliders with Blackberry BBQ Sauce

What you'll need: 

1 large onion

3 Tablespoons olive oil

1 cup dark beer

1 teaspoon sugar

1 cup ketchup

6 Tablespoons apple cider vinegar

1/3 cup brown sugar

1/2 cup plus 2 Tablespoons root beer

1 Tablespoon Worcestershire sauce

1 Tablespoon bbq rub

2 cups fresh blackberries

8 ounces strong white cheddar cheese

4 Lightlife Original Smart Patties

4 mini brioche buns

How to make it: 

Slice the onion in half and then slice each half into thin strips.

Heat the olive oil in a medium pan until hot and then add the onion.

Sauté for about 10 minutes until the onion becomes soft, then add the beer and sugar.

Cook for 1 hour on low stirring from time to time. The onion should become caramelized and reduce in amount by half.

 

For the Sauce-

 

In a small pot, combine the ketchup, apple cider vinegar, brown sugar, root beer, Worcestershire, bbq rub and blackberries.

Bring to a simmer and cook on low for about 20 minutes.

Transfer to a blender and puree the sauce until smooth. Store in a sealed container in the fridge.

 

Preheat your grill to high and then place the Lightlife Smart Patties directly over the flame.

Cook for about 3 minutes and then turn them over for an additional three minutes of cooking time.

Slice the cheese into thin strips and place 2-3 pieces on top of Smart Patties.

Cook for another minute or until the cheese has melted.

Toast each side of the buns.

Spread some bbq sauce on the base of each bun, followed by one patty.

Place some of the caramelized onion on top and then some more sauce.

Finish by adding the top part of the bun to each slider and serve at once.
