Stuffed Savory Pastries

What you'll need: 

3 1/2 ounces (or 1/4 package) Lightlife® Gimme Lean® Beef
1 package (17.3 oz) puff pastry sheets, thawed, each sheet cut into 9 (3x3-inch) squares (18 squares total)
2 Tbsp. extra virgin olive oil, divided
1/2 cup crumbled feta cheese
1/2 cup shredded Mozzarella cheese
2 Tbsp. freshly minced parsley
1 Tbsp. freshly minced dill
1/8 tsp. freshly cracked pepper
chutney or salsa of choice (optional)

How to make it: 

Preheat oven to 400°F.

In 10-inch nonstick skillet place olive oil. Add Gimme Lean® Beef; cook, stirring frequently, until lightly browned (2-3 mins.). Remove from heat.

In large bowl combine cooked Gimme Lean® Beef, feta cheese, mozzarella cheese, parsley, dill and pepper; mix well.

On each 3x3 inch square of pastry, place about 2 heaping tablespoons of filling. With a pastry brush, slightly wet edges of pastry.

Stretch pastry and fold over to cover filling and form a triangle. Using a fork, seal edges. Place triangle pastries on parchment-lined baking sheets.

Brush tops of pastries with remaining 1 tablespoon of olive oil. Bake for 15-18 mins. or until golden brown. Serve with chutney or salsa. Refrigerate leftovers.
