Vegetarian Club Sandwich

Vegetarian club sandwich
What you'll need: 

1 french baguette cut into three equal sizes and sliced in half
1 pack Lightlife Smart Deli Meat
1 pack Lightlife Smart Bacon
2 heirloom tomatoes
1 head romaine lettuce
1/2 cup Veganaise Mayonnaise
2 tbsp fresh pesto sauce

How to make it: 

In a pan heat the olive oil until hot and then add the Smart Bacon.
Cook until the bacon starts to bubble around the edges and then turn over and cook for another 3-4 minutes.
Set aside.
Lay the bottom part of each sandwich on your cutting board.
Mix the vegan mayonnaise with pesto and spread on each slice of the baguette.
Place some slices of the Smart Deli meat on top of the spread followed by 2-3 leaves of the lettuce, sliced tomato and four slices of the Smart Bacon.
Top with the remaining baguette slice and serve at once.
