Vegetarian Jambalaya

What you'll need: 

1 package (12 oz) Lightlife® Smart Sausages® Chorizo Style, cut into 1/2-inch pieces
2 Tbsp. olive oil
1/2 cup chopped yellow onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
2 tsp. finely chopped garlic
1 can (14.5 oz) stewed tomatoes, undrained
1 1/2 cups frozen cut okra
2 cups water
1 Tbsp. Cajun seasoning
1/4 tsp. salt
1 cup long-grain white rice, uncooked

How to make it: 

Heat oil in large saucepan over medium-high heat. Add onion, pepper and celery; cook 5 minutes or until vegetables are tender, stirring occasionally. Add garlic; cook 1 minute more or until fragrant.

Add undrained tomatoes; break up tomatoes with spoon. Add Smart Sausages®, okra, water, Cajun seasoning, salt and rice; stir to combine.

Bring to a boil; reduce heat, cover and simmer 25 minutes or until rice is tender. Stir before serving.
