Teriyaki Tempeh Stir Fry

2 cups broccoli, chopped into bite sized pieces
1 red bell pepper, sliced thin
2 T Olive oil
½ t salt
½ t pepper
½ t garlic powder
½ cup peanut sauce
1 package Teriyaki Tempeh Cubes
8 oz rice noodles
3 green onions, sliced thin on a bias
2 T roasted salted peanuts, crushed
Preheat oven to 425°.
Toss broccoli and red pepper slices in olive oil, salt, pepper and garlic powder. Roast in oven until crispy, about 15 minutes. Remove from oven and set aside.
Cook rice noodles according to package directions. Rinse with cold water.
In a large skillet, cook tempeh according to package directions. When tempeh is done, add broccoli, red peppers, noodles and the peanut sauce to the pan. With tongs, carefully toss everything into the sauce while separating the noodles.
Top with green onions, crushed peanuts and extra sauce as desired. Enjoy!
