Instructions:
1. Preheat oven to 400 degrees.
2. In a small bowl, combine mayo, and 1 TBSP garlic. Whisk to combine.
3. In a skillet over medium heat, add 1 TBSP of the olive oil, and sear the tomato slices for 2 minutes per side, season each side with salt (to taste) while cooking. Remove the slices from the pan and set aside. Add the remaining garlic and olive oil to the pan, followed by the spinach. Reduce the heat to medium low, and saute until all the spinach is wilted, taste and season with salt to taste, and remove from the heat.
4. On a sheet pan, lay the sliced english muffins and the smart bacon in single layers. Bake for 7-8 minutes, turning the bacon once during cooking. Half way through, add the egg to one side and top with a cheese slice.
5. Remove from oven and assemble the sandwiches by spreading the mayo mixture on naked english muffin halves, followed by the spinach and tomato slices, then top with the egg and cheese topped halves.
