Sticky Tempeh Lettuce Wraps

These sticky tempeh lettuce wraps are both high-protein and easy to make. The sticky sauce is irresistible and tastes great with the crisp lettuce. This recipe makes a great weeknight dinner and rivals your favorite takeout.
Serves: 2-3
Prep and Cook Time: 30 minutes

Ingredients:

1 (8 oz) package LightLife® Original Tempeh, crumbled
1 tbsp Sesame Oil
1⁄2 cup Red Bell Pepper, finely chopped
1⁄2 cup Shredded Carrots
1⁄2 cup Vegetable Broth
1⁄4 cup Liquid Aminos or Soy Sauce or Tamari
2 Cloves Garlic, grated
1 tsp Sriracha
1 tbsp Rice Wine Vinegar or sub Apple Cider Vinegar
1 tsp Grated Ginger
Juice from 1⁄2 Lime
1 tsp Miso
2 tbsp Arrowroot Starch or sub Corn Starch
4-6 pieces Boston Bibb Lettuce
1-2 tsp Sesame Seeds
1⁄4 cup Finely Chopped Cilantro
Instructions:
1. Add oil to a skillet over medium heat. Add tempeh, bell pepper, and carrots. Cook for 6 minutes.

2. Whisk together vegetable broth and all of the ingredients that follow. Add sauce to the skillet with tempeh and vegetables. Toss together with all ingredients in the pan. Cook for about 4 more minutes, until the sauce has thickened and everything is cooked through.

3. Let the filling cool for about 5 minutes, then add to the lettuce wraps. Top off with sesame and cilantro.
