Spice up your plant-based palate with this Buffalo Chicken Salad using our plant-based tenders. Move over wings. This Buffalo chicken salad with our plant-based tenders has got some bite.
3 oz Arugula
1 cup Cherry tomatoes, halved
1 avocado, sliced or diced
½ cup celery, chopped small
¼ cup green onion, chopped small
½ cup shredded carrots
Buffalo Yogurt Dressing:
1/3 cup buffalo sauce
1/3 cup plain plant-based yogurt
2 tsp rice wine vinegar
2 tbsp water
Preheat oven or air fryer to 400°F.
Cook chicken tenders according to preferred package directions.
While tenders are cooking, make your buffalo yogurt dressing. In a medium sized jar, add all buffalo yogurt dressing ingredients and mix until well combined.
Remove chicken from oven or air fryer and slice into bite sized pieces.
Assemble salad with all salad ingredients and toss with dressing.
