Green Goddess Grain Bowl

1 cup wild rice, cooked
1 cup sweet potatoes, ½ inch cubes
Olive oil
Salt and pepper
1 package Lightlife Plant-Based Chicken Tenders
1 French breakfast radish, sliced thin
½ cup roasted chickpeas
Green Goddess dressing or dressing of choice
Fresh parsley for garnish


Preheat oven to 425 °F.

Toss sweet potatoes with olive oil, salt and pepper. Spread onto a large baking sheet and place in the oven for about 25 minutes. Shake halfway through.

Meanwhile, cook your tenders according to package directions. Remove from heat source once cooking is completed. Cool for a few minutes, then slice.

Assemble your grain bowls! Distribute the remaining ingredients between two bowls. Add in rice, radishes, chickpeas, sweet potatoes and chicken tenders. Drizzle with your dressing and finish of with a few sprigs of fresh parsley!
