Harissa Sheet Pan Tempeh

1 pack Lightlife Original Tempeh, cut into cubes
2 cups mixed bell peppers, sliced
1 cup brussel sprouts, cut in halves or quarters
¼ cup harissa
4 tbsp avocado oil, divided
2 tbsp maple syrup
1 tsp garlic powder
Salt + pepper taste
Optional: fresh parsley / cilantro
In a small mixing bowl, whisk together harissa, 2 tbsp avocado oil, maple syrup, garlic powder, and salt + pepper. Add Lightlife Original Tempeh and toss until evenly coated.
In a separate bowl, toss vegetables with 2 tbsp avocado oil, salt, and pepper. Place onto the baking sheet and bake for 20 minutes.
Remove from the oven and place the Tempeh on top. Bake for an additional 15 minutes at 400F. Transfer to a plate and add parsley/cilantro before serving.
