Layered Mediterranean Dip

Dill Yogurt:

½ cup plain plant-based yogurt

1 tbsp fresh dill, minced

Juice from ½ of a lemon

Pinch of salt and pepper


Smart Ground:

Olive Oil

4 oz Lightlife Smart Ground

½ tsp dried oregano

½ tsp cumin

Pinch of salt and pepper


8 oz hummus of choice

2 oz roasted red pepper, diced small

2 oz kalamata olives, pitted and halved

2 oz cucumbers, diced small

2 oz cherry tomatoes, halved

Fresh dill for garnish

Fresh pitas for serving


In a small bowl, mix all dill yogurt ingredients together. Cover and set aside in refrigerator.

In a medium size pan, add a small drizzle of olive oil on medium heat. Add Smart Ground and break up with a wooden spoon or spatula. Add oregano, cumin, salt and pepper. Cook until evenly browned and warm, about 3-4 minutes. Remove from heat.

In a large shallow bowl or plate, build your dip. First, spread the hummus on the bottom of the bowl or plate. Then, add a layer of the dill yogurt. Add your Smart Ground crumbles next. Then top with red peppers, olives, cucumbers, and tomatoes. Garnish with a few small pieces of fresh dill. Serve with fresh pita slices or chips of choice.
