Mediterranean Burger Salad

1 pack Lightlife® Plant-Based Burger patties 

4 cups arugula

1 yellow bell pepper, diced

½ cup cucumbers, diced

½ cup grape tomatoes, sliced

½ cup red onions, sliced

¼ cup black olives

¼ cup plant-based feta

1 full-sized whole wheat pita + 1 tbsp olive oil + sea salt

½ cup extra virgin olive oil

¼ cup red wine vinegar

Juice of 1 lemon

2 tsp dried oregano

Salt + black pepper to taste


Preheat the oven to 375F. Cut pita bread into slices and toss into a bowl with 1 tbsp olive oil and salt until evenly coated. Bake for 10 minutes or until golden-brown. Remove from the oven and allow to cool.

Meanwhile, cook Lightlife Burgers by preheating a nonstick pan on medium heat. Add a drizzle of oil and cook burgers for 9-10 minutes, turning frequently until brown

To assemble salad combine arugula with bell peppers, cucumbers, grape tomatoes, red onions, black olives, and feta. Whisk together ingredients for the dressing and toss with the salad ingredients until well combined. Add pita croutons and serve with a Lightlife Burger on top.
