4 slices, bread of choice
3 tbsp, plant-based pesto, divided
4 tsp, plant-based mayo, divided
1 cup, arugula, divided
1 small heirloom tomato, sliced thin
If you’d like to toast your bread, now is the time to do it!
Then, start assembling your sandwich. Divide pesto evenly and spread on each slice of bread. Divide mayo evenly and spread on top the pesto on each slice of bread. Add ½ cup of arugula to one piece of bread only for each sandwich. Add a few slices of tomato on top of the arugula. Add 4 slices of Smoky Tempeh on top of the tomatoes. Close sandwich with other piece of bread, cut in half and enjoy!
