2 Lightlife® Plant-Based Burger, salt and freshly ground pepper to taste
1 tsp. olive oil
1/4 cup sweet white onion, peeled and sliced into 1/8” wedges
2 button mushrooms, thinly sliced
1/4 cup red bell pepper, thinly sliced
1/4 tsp. salt and freshly ground black pepper
2 slices. pepper jack cheese or dairy-free jack cheese
1 brioche burger bun or bun of your choice, lightly toasted
6 slices dill pickle rounds
3 Tbsp. chunky guacamole
Spicy Busy Sauce
2 Tbsp. plant-based mayonnaise
1/8 tsp. Cayenne, plus more if desired
To prepare the Spicy Busy Sauce, stir the plant-based mayo and the cayenne together in a small bowl.
To prepare the veggies, heat olive oil in a skillet over medium heat. When hot, add the sweet onion, sliced mushrooms and red bell pepper. Sauté for 3 to 4 minutes until tender and crisp. Season with salt and pepper. Set aside.
To prepare the Lightlife® Burgers, season the patties with salt and pepper to taste. Fire up the grill to medium heat (or spray a large non-stick skillet with cooking spray and place over medium heat). Cook the burgers for 3 to 4 minutes per side until evenly brown and heated through. During the last minute of cooking, top the flipped patties with the slices of cheese and let melt slightly.
To assemble the Busy Max Burger, slather the toasted bottom brioche bun with a heaping tablespoon of Spicy Busy Sauce, layer up with the dill pickle rounds, and nestle on one patty. Pile on the veggies and the chunky guacamole and top with another patty.
Spread more Spicy Busy Sauce on the top bun, place on burger and enjoy while hot.
