Flax Tempeh Superfood Salad

Ingredients:

8 oz Flax Tempeh, sliced
1 bunch Kale, washed and chopped
.50 cup Blueberries
.25 cup Pomegranate Seeds
.25 cup Toasted Pumpkin Seeds
.25 cup Balsamic Vinaigrette
1 TBSP Safflower Oil
Instructions:
1. In a skillet over medium heat add the oil and the sliced tempeh. Cook for 5-7 minutes per side, until golden brown and crispy. Remove from heat and set aside.

2. In a large salad bowl, toss the kale, blueberries, pomegranate seeds, pumpkin seeds, and dressing. Top with tempeh and serve.
