It’s got buffalo seasoning. Itʼs got ranch sauce. But most importantly, it’s got tempeh. We’ve tempehfied a classic buffalo sandwich to make it deliciously vegan-friendly. Opt to make it a salad for your gluten-free friends; we love it that way too.
Serves: 3
Prep and Cook Time: 15 minutes

Ingredients:

1 (7 oz) package LightLife® Buffalo Tempeh Strips
1 tbsp Safflower Oil
8 cups Romaine Lettuce, chopped
1⁄4 cup Red Onions, sliced
1⁄2 cup Celery, chopped
1⁄4 cup Carrots, shredded
1⁄4 cup Plant-Based Ranch Dressing
1⁄2 cup Avocado, sliced
Buns of your choice
Instructions:
1. In a skillet over medium heat, add the oil, and then the tempeh. Fry tempeh for 3-4 minutes per side, until each side is seared and tempeh is heated throughout. Remove from heat and set aside.

2. In a large salad bowl, combine the lettuce, onions, celery, carrots, and dressing; toss to combine. Add the buffalo tempeh.

3. Assemble the sandwich by adding the tossed salad & tempeh mixture with some sliced avocado to a bun of your choice and enjoy!
