1. Preheat oven to 425.
2. Line baking sheet with foil. Lay squash onto the foil. Spray or drizzle with olive oil, then sprinkle with salt, pepper and garlic powder to your liking. Place into the oven and cook for ten minutes.
3. Meanwhile, drizzle olive oil into a medium sized skillet and heat until shimmering. Add red onion. Add Gimme Lean Sausage® and break up with a wooden spatula. Cook through in pan until sausage is nicely browned, about 5 minutes. Remove from heat.
4. Place cooked squash + Gimme Lean mixture into a 8.25” pie dish and mix to combine ingredients. Pour in egg substitute. Sprinkle with a dash of salt, pepper and garlic powder.
Bake for about 25 minutes or until egg has been set. Let rest for about 5 minutes. Cut and serve.
