1. In a skillet over medium heat add the oil and the sliced sausages. Sear the sausage pieces on each side, about 2-3 minutes per side, then move sausage pieces to a plate, and add the peppers and onions.
2. Increase heat to medium-high, stirring occasionally, cook peppers and onions until soft, and onions have start to become translucent.
3. Add the sausage pieces back to the mixture and stir to combine.
4. Serve over rice or pasta.
