4 each LightLife® Italian Sausage, sliced on the bias
8 oz Chickpea Noodles
1 medium crown Broccoli, cut into florettes
.25 cup Olive Oil
2 TBSP Garlic, minced
2 TBSP Shallots, minced
2 tsp Red Pepper Flakes
2 TBSP Plant-based Parmesan
2 TBSP Sea Salt
1. In a large pot over high heat, add 4-6 quarts of water and the sea salt and bring to a boil. When the water is boiling, add the pasta and stir. Cook the pasta 7-8 minutes, stirring occasionally, until pasta is tender. Drain well.

2. In a skillet over medium heat, add the olive oil and LightLife® sausage, and sear both sides of each sausage piece (about 3-4 minutes). Add garlic, red pepper flakes, and shallot, and reduce heat to medium-low stir to fully combine. When garlic starts to become very fragrant, add the broccoli and stir. Cook for 2-3 minutes then add the pasta. Stir to coat, and serve garnished with parmesan.
