Three Grain Tempeh Satay

Serves: 3-4
Prep and Cook Time: 1 hour

Ingredients:

8 oz Three Grain Tempeh, cubed
4 each Baby Bok Choy, washed and sliced in half
.25 cup Peanuts, roasted
1 cup Peanut Sauce
1 TBSP Garlic, minced
.50 cup Soy Sauce
1 TBSP Sesame Oil
.25 cup Mirin
1 TBSP Ginger, minced
1 tsp Sesame Seeds
2 TBSP Safflower Oil
4 cups Cooked Rice, warm
Instructions:
1. Remove cubes from marinade and transfer to another bowl with bok choy, and oil. Toss to coat. Skewer the tempeh on wooden skewers.

2. On a grill over medium high heat, grill tempeh skewers, turning occasionally until charred grill marks appear on all sides.

3. While they are cooking, add the bok choy to the grill, flat side down, and grilled until soft and charred (about 5-7 minutes).

4. Remove everything from the heat and set aside.
