Parisian Style Tempeh of the Sea Baguette
Serves: 2-3
Prep and Cook Time: 15 minutes

Ingredients:

For the Tempeh of the Sea:
8oz Lightly Seasoned Original Tempeh Crumbles or 8oz Lightlife Soy Tempeh, flaked and or crumbled by hand
0.25 cup Celery, diced
1 tbsp Shallot, minced
0.5 cup Vegan Mayo
1 tbsp Cornichons, minced
1 tbsp Dijon Mustard
1 Tbsp Furikake or Nori Flakes
2 tsp Fresh Dill, minced
2 tsp Capers, minced
Sea Salt or Aminos, to taste

For the Sandwich:
1 Demi Baguette, sliced lengthwise
2 cups Mixed Greens (loose packed)
1 tbsp Olive Oil
1 tbsp Red Wine Vinegar
1 Ripe Heirloom Tomato, cut in to wedges
Instructions:
1. Combine all “Tempeh of the Sea” ingredients in a bowl. Combine well, using gloved hands to break down any remaining large chunks of tempeh.

2. Assemble sandwich with tempeh salad, mixed greens, and tomato wedges on the baguette. Drizzle with olive oil and vingear, cut in to portions and serve.
