Big Man’s Breakfast Taquitos

Move over breakfast burrito! This new twist on taquitos inspired by Tacko Fall, made with Lightlife Plant-Based Gimme Lean Sausage and Chao shreds, will take your morning to new heights!
4 tbsp olive oil, divided
15 oz black beans, drained and rinsed
14.5 oz fire roasted tomatoes, drained
1 ½ cups Chao Creamery Creamy Original Shreds
salt & pepper to taste
8 flour tortillas
optional toppings: avocado, hot sauce, cilantro
In a large non-stick skillet, heat 2 TBSP of olive oil on medium high heat. Add Gimme Lean sausage to the pan and break up into crumbles with a wooden spoon or spatula. Cook the meat until nicely browned. Add black beans and tomatoes, mix until well combined. Reduce heat to medium, add shredded cheese and mix until well combined and cheese begins to melt. Once cheese is almost completely melted, turn off heat.
Lay tortillas on a flat surface and distribute filling equally amongst each tortilla, placing the line of filling closer to one end of the tortilla. Tightly roll the tortilla and place seam side down on a baking tray or plate.
In a large non-stick skillet, heat remaining olive oil on medium high heat. Place taquitos seam side down into the skillet. Once seam has sealed and that side is crispy, flip to the other side and cook until crisped and golden brown. Remove from pan and serve immediately!
