Inspired by a Meatball & Cucumber salad dish from Epicurious!


6 LightLife® Smart Meatballs
2 lb Persian or English hot house cucumbers
2 TBSP olive oil
3 TBSP toasted pine nuts
1/2 cup green olives
2 cups tender herbs, such as mint, Italian parsley, dill, cilantro or basil
1/2 small red onion, thinly sliced
1 TBSP red wine vinegar
1/2 cup unsweetened coconut yogurt (for serving)
1/8 cup golden raisins
1. To prepare meatballs, heat 1 Tbsp olive oil in pan and cook 3 to 4 minutes per side until evenly browned and cooked throughout.

2. While the meatballs are cooling, coursely chop cucumbers, olives, pine nuts, onion, herbs, raisins, and toss to combine.

3. Toss the cucumber mixture with vinegar and 1 Tbsp oil, and season with salt and black pepper to taste.

4. To serve, spread yogurt on the bottom of a bowl or plate, top with the salad and meatballs.
