1. In a skillet over medium heat, add the oil and the smart grounds. Cook for 5-7 minutes, stirring occasionally, then add the marinara sauce. Continue cooking until sauce is hot, lower heat to a simmer.
2. In a large pot, add 4-6 quarts of water and salt. Bring to a boil, then add zoodles, stir and cook for 90 seconds. Drain zoodles and quickly transfer to a large bowl full of ice water to stop the cooking process. When noodles are cool, drain and pat dry with a paper towel.
3. Portion zoodles into bowl and top with a generous helping of sauce, garnish with fresh basil and parmesan.
